
Cod
Salted Cod or Baccalà (for the Italians).
The word Baccalà stands for Cod (Gadus morhua or Gadus macrocephalus) salted and seasoned. The G. macrocephalus is caught in the North Pacific Ocean while the G. morhua is caught in the North Atlantic Ocean.
Our Baccalà is worked by Cod frozen at sea or by fresh Cod, the fish is mainly caught by hook. The producers with whom we have business relationships are located in: Denmark, Faroe Islands, Norway and Iceland.
Wet salted Cod fillets – Gadus macrocephalus
The Gadus macrocephalus is characterized by a flake particularly compact e of very white colour.
The sizes are: 200/400g, 400/700g, 700/1000g and 1000g/UP.

The Gadus morhua is characterized by a tender meat and delicate taste.

The fish is opened as a “butterfly” and then is salted and seasoned.
The size are: 0,5/0,8kg, 0,8/1,2kg, 1,2/1,7kg, 1,7/2,7kg, 2,7/4kg and 4kg/UP.

Dried salted split Cod
The fish is opened as a “butterfly” and then is salted, seasoned and dried. This type of product is produce almost exclusively in Norway. It can be called “White wings” or “Black wings” depending if it is removed or not the black membrane that winds the stomach.
The sizes are: 31/40, 21/30, 16/20, 13/15, 10/12, 7/9 and 4/6. It is meant the number of fishes for carton (of 25 kg).
