Differently from other types of salted Cod, the dried salted Cod Gaspè Cured has a very low salt content and the drying process is longer than the usual dried salted Cod. Another characteristic of the drying process is that it is partly made outdoors, to the sun.
The dried salted Cod Gaspè Cured follows a very old traditional process, each fish is cut by hand, lightly salted, and then stretched outdoors on the racks along the coast of Gaspè for the drying. The Cod is then piled up during an aging period and ultimately returned outdoors again to complete the final drying phase.
It can be worked from Cod Gadus morhua or Gadus macrocephalus.
The qualities are: Choice (fist quality) and Royal (second quality). Size: Regular, Medium, Large and Extralarge.
