Dried Brosme

Brosme (Brosme brosme) is fished in the North Atlantic Ocean. Consumption occurs mainly in Nigeria. In Italy, there is a small consumption of dried “split brosme”, which is brosme cut into two fillets and then hung by the tail to be dried.
